Description

Know a Cabernet Sauvignon lover? Have you heard about ours?

“This must be some kind of record: Xanadu Cabernet Sauvignons have won the trophy for the best Cabernet Sauvignon at the National Wine Show six years in a row.” – Huon Hooke

Already awarded 7 gold medals at major Australian wine shows and pre-packed in a single gift box, this makes for the perfect Christmas gift. Available in limited quantities.

The generous yet elegant palate offers wonderful inky blue fruits, mulberries, black plums and ripe blackcurrants. Beautifully structured and precise, the fleshy fruits combine with supple tannins to culminate into a lingering Cabernet finish.

Vibrant and robust in its youth, this is a wine which will certainly benefit from further bottle maturation and will cellar comfortably for 5-10 years.

Growing Conditions
A relatively mild, warm Winter resulted in an early budburst to kick-start the growing season. This was followed by some relatively wild Spring weather with wet, windy conditions affecting fruit set and resulting in low yields across most varieties in the region. Beautiful, warm weather returned in Summer which saw flavour ripening accelerate, bringing about our earliest vintage on record. A lack of Marri blossom leading up to and during harvest meant bird pressure was extreme, with netting absolutely vital. The early start to the vintage ensured red varieties were able to be harvested at optimum maturity during the cool finish to the season. This is the best red wine which we made from the 2015 vintage. All the fruit for this Cabernet Sauvignon is from the bottom of Block 3 at our Stevens Road vineyard which is situated on the Boodjidup Brook about 3km from the winery. Fruit from this mature, low yielding vineyard consistently produces some of our best Cabernet each vintage, which we bottle as a single vineyard wine. Limited to only 250 dozen, the 2015 Stevens Road Cabernet Sauvignon recognises the outstanding quality that this individual vineyard can produce and also highlights the unique personality of this special site.

Winemaking Notes
This 3.5 tonne parcel of fruit was crushed/destemmed and fermented in a small static fermenter at 25°C, during which the cap was managed by regular pump aerative overs. After enjoying a four week extended maceration on skins the wine was pressed very gently (no more than 0.6 Bar), and then matured in fine French oak (40% new) for 14 months prior to bottling.

Deep, bright, youthful red/purple colour with a lifted fragrance recalling violets and both red and darker fruits, a touch of briar and some tomato bush. It's full-bodied and softly fleshy, chewy-textured and tight-packed, with lots of extract and density. There's a trace of regional peatiness. Very good wine, and it will repay cellaring.

From Block 3 of the vineyard that Xanadu knows like the back of its hand. Static fermented, 28 days post-ferment maceration, matured for 14 months in French barriques (40% new). Combines elegance with length, intensity and balance. Blackcurrant, earth, black olive and cabernet tannins all chime in on the heavy lifting - this at 14% alcohol tells it all.

Exciting example of what is coming from this vineyard acquired by Xanadu a few years ago. Exotic spicy aromas, with intense and compelling blackcurrant fruit and a trace of graphite. Tightly held palate is bound by fine-grained oak and silky fine chalky tannins to add structure. Seamless and elegant. Finishes with haughty poise.

A single vineyard, 100% cabernet, it's earthy-toned with menthol, juniper berries, cassis and leafy freshness, some new leather and oak spices too. Full-bodied, firmly structured with youthful, formidable tannins and needs more time to settle. It has power, drive and long-term ageing on its side.

A stunning, finely-crafted wine with pristine red and blue fruits. It is aromatically engaging with notes of violet, blueberry and cassis, and the mid-palate flavours are powerful. The tannins are gently drying and need a little time to soften. Cellar in the mid-term

There’s no Xanadu Reserve cabernet in 2015, but this maintains the standard. Lovely lifted violets and red and darker fruits, a hint of briar and peatiness on the nose. Full body, softly fleshy and chewy texture. Worth cellaring.

Perfume of mint, flowers, along with that ‘wet cement’ thing some MR Cabs show. A mix of forest berries and coffee, fine grained tannin, shape and length, balanced acidity. Grippy and almost sappy in the finish. Finesse, rather than power. Good at its game.
