Xanadu Restaurant Head Chef
Xanadu’s head chef, Melissa Kokoti, grew up in South Australia’s Riverland Region where she and her family spent their school holidays picking grapes and going on camping and fishing expeditions. Mel grew up with a strong Cypriot influence and many meals were spent dining on traditional fare as her Father, her inspiration, was also a chef. Mel’s passion for food and travel led to interest for Mediterranean, European and Middle Eastern cuisine, assisted by her experiences through France, Cyprus, Egypt, Dubai, Scotland, Ireland and England.
Mel moved to Western Australia aged 13, already knowing she wanted to be a chef. At 15 Mel undertook a one year cooking course and a 6 month pre-apprenticeship before beginning her apprenticeship in a restaurant specialising in Australian cuisine.
Working at various restaurants around Perth, Mel eventually made the move to Margaret River, drawn to the fresh local produce and lifestyle, taking up positions at Driftwood Estate, Amberley Estate and Evans & Tate, before finally settling into Xanadu Wines in 2007. Mel’s expertise contributed to Xanadu’s 3 consecutive Gold Plate Awards in 2009, 2010 and 2011 and the Gold Plate Prix d’Honneur Award in 2012 from the Catering Institiute of Western Australia.
Influenced by family heritage and travelling, and the abundance of fresh local produce, all are showcased through her menus in the restaurant and catered events on the property. Mel’s passion for food continues to create inspiring meals, bringing both locals and tourists to Xanadu’s restaurant, creating memorable dining experiences.
